I do cook......occasionally!!

I went over to Looperville and saw that my friend Amanda was posting pictures with words on them and so I said how did you do that? She said I uploaded to PowerPoint and saved as a jpg. and I said....A-mazing. I don't think I have ever used power point?!?
After last night I knew I had the picture that I wanted to scribble on so I did and it worked -
she is a pure genius. And, did I mention that Amanda and I have been friends since Kindergarten?!? Yep!
On to Recipes
I wish I was the girl who had the weekly menu printed and obided by it to plan my grocery lists in advance, to check the stock in the pantry and not overbuy or overspend.
But, I am the girl who would just rather eat out after a long day at work- or eat cereal for supper. I tend to make the same things over and over spaghetti, tacos, meatballs, roast, pork loin, and pork chop casserole-notice I don't cook any chicken. But last night, I got a fancy feather up my sleeve and decided to cook a fancy pants meal: stuffed bell peppers. And, ya'll I don't even like bell peppers?!? I dont like to stick to recipes line by line- I like to read the ingredients from a few different recipes and make my own version. So here is how it all went down.
I went to Bi-lo spent 42.00 on one meal. Ridiculous!!
I know it should not cost that much I seriously had three bags valued at 42.00 and when the checkcard devise asked me if 42 dollars was ok yes or no I almost checked no and left my bags there. But then I would have no dinner, no picture, and no stuffed bell peppers. Refer to the line where I mentioned that I wish I was the girl who took inventory of her pantry and made a menu.
I made it home by 6:50 and proceeded to finish what I had already started:
Stuffed Bell Peppers.
I beheaded the bell peppers (2) green (2) red-
I chopped onion and garlic and sauteed them in butter
I added a can of corn, black beans and some reserved seasoned hamburger meat that I set aside from the spaghetti I made on Monday night because I'm creative like that... simmered all ingredients unitl warm throughout and sprinkled in some cumin, Franks red hot sauce and the secret ingredient my dad always cooks with....love...
I made a pot of instant white (gasp) rice I dumped ahem. I mean, gracefully poured all ingredients into my mixing bowl and added one can of tomato sauce.
Meanwhile, back on the stove I brought water to a boil and boiled my bell peppers for 3 minutes to soften them up a little and because that is what my momma said to do.
I stuffed my pretty little bell peppers, set them up for a photo shoot and slid em in the oven for 15 minutes on 350 degrees. During the last 2 minutes I topped them off with some pepper jack cheese.
Are you as worn out as I was by this point?!?
I sauteed more onions and mushrooms for a side and slid some garlic bread in the oven during the last five minutes. I arranged the food on our plates and served prince charming.
They looked pretty, smelled heavenly and when we took our first bite we determined that they were spicey HOT. Good, not overwhelmingly hot but they packed enough heat to make us slurp down our sweet tea. I didn't even ask husband to rate our plate because he would only tell me what I wanted to hear since I did slave in the kitchen for an hour, but I'm guessing this is a recipe I can use at least four times a year- winter would be good to warm our insides up.

  1. Looks delicious! I'm just like you - I get stuck cooking the same things over and over. I'm always looking for new EASY recipes. This week I am trying chicken, bacon and avocado quesadillas and cheeseburger melts on flat bread. I'll let you know how it all works out. Those peppers might be my next recipe to try!
